Fish & Grits


Cook grits. Real grits. Not microwave or instant grits. Cook real grits that take 20-30 minutes to render their creamy mushiness. While they are cooking, prepare a few filets of Tilapia or your favorite finned and scaly, gilled vertebrate. Vicki used tilapia filets and seasoned them with red and black pepper, cilantro, paprika, and kosher salt. Lightly oil the fish so that the spices will adhere and render their goodness into the flesh.

Slip the fish into the broiler of the oven. Check on the grits as they need stirring to keep from sticking. When the grits get done, add butter, pepper jack and monterey jack cheese. By this time the fish should be ready.

Plate and serve with biscuits for a pure southern flavor.
